Bit crushing seems to be one way for obtaining satisfying high frequencies from simple sounds; hi hat, for example, sometime you wish to use simple hats, but you won't go for something as tiny and piercing as some hats once were; so here this effect may help. For me it seems to thickens the high frequencies (which I find helpful for pads and drones as well) and makes them sometime more bearable, which are two good things. Now if it happens that too many people are using it in cheap ways, and if that's what you're on, I won't be astonished either but I don't know about it - taste wise I'm a little out of modern music actually, electronic or not (save for some IDM or German minimalist electronica).
I just don't think I can wrap my head around bitcrushers providing "satifactory" or "thickened" highs; I would look at EQ and saturation for that. Like you say, sparse use probably produces the more mix-friendly results. I'll have to take the more experienced bitcrushers' word for it and resolve to explore the effect a "bit" more. (ouch, bad pun!
