Sampletekk offers gigastudio 3, Gigasampler2, Kontak, Halion, and EXS24 MkII 24 bit.

I don't have a sampler that can use any of those but I do have sfz.

I am thinking that I can convert one of the available formats into sfz format.

Which one would convert the best?

I'd go for GS2, or Kontakt if it's not K2-specific - in fact, many of the K1 formats are distributed multi-format - K1, Halion and EXS - that's how the Arp Solina came. IIRC you can have EXSC create just the .sfz file, it doesn't have to make a copy of the .wav files.

Fair warning though - DimPro and most other sfz players do not stream. I converted Rain Piano from K1 to sfz just fine, but it tried to load all 700+MB of samples and choked (it would be even worse on White Grand, TBO or Emperor).

Other than pianos, streaming is probably not an issue - the Arp Solina samples are all 65M/voice or less, Harpsichord is 55MB, the recorders are under 50M per voice (5 recorders, 5 different voices each).

The SFZ player does do direct-from-disc streaming.

Neat! I forgot about that. I wonder why it never made it into DimPro, other than that they weren't looking to make a Kontakt-alternative?

I am not certain if sfz can stream sfz format.

It does stream sf2.
