Well I own both (Sampletank 2 and Reason 3), but I tend to use more and more Reason and less ans less VST stuff.
As there are very nice and usefull sounds in ST2, I wonder if there is a tool that can convert these to the NN-XT format ?

No, at least not directly. The popular Extreme Sample Converter only supports SampleTank 1 sounds and does not support NN-XT at all. ChickenSys Translator supports both ST2 and NN-XT but direct conversion between the two is neither available nor planned due to documentation or licensing reasons on the part of SampleTank.

I've seen that the Sonic Capsules from Sonic Reality come with a tool named UFO.
Does this tool work only with the sounds of the capsule, or can it be used to convert other sampletank sounds ?

If you're not averse to spending more money, check out the eSoundz World Of Reason. The refills have been updated for Reasons 3.0 and include custom Combinators.
Otherwise your best best is to probably Rewire Reason with your VSTi host running SampleTank2.
