Track count isn't really indicative of anything, because the concept of a track differs from host to host, and also because a track could be a synth, samples, or just automation.

Commiting to a range of number of elements I tend to use is difficult, since sometimes I get extremely sample-happy, and sometimes I use nothing but synths, sometimes I keep it minimal and sometimes excessive.

Here's a listing of the number of elements of three of my recent songs:

Number 1, 2:53 (this one is pretty minimal)
3 Synths
2 Samples
5 EQs
4 Other effects
0 Automated items

Number 2, 5:14
7 Synths
14 Samples
11 EQs
9 Other Effects
5 Automated Items

Number 3, 5:31
6 Synths
5 Samples
8 EQs
13 Other Effects
4 Automated Items
Cakewalk by Bandlab / FL Studio
Squire Stratocaster / Chapman ML3 Modern V2 / Fender Precision Bass

These days I rarely use more than 4 tracks. One for drums, one for bass and the other two for melodic elements or atmospherics. In fact the last few tracks I've released have consisted of only 4 or 5 samples each ...

Anywhere between 20 and 50, give or take.
But my host is flstudio, which allows pretty much unlimited submixing, so I generally work with a very convoluted signal path.

approximately..

8 - 20 for drums,
2 - 8 for bass,
4 - 10 for "keys" (ep, organ, yadda yadda)
5 - 20 for other stuff....

add automation to that, and bump it up +100.

.. but like I said, once it enters the mixer, things start getting seriously lateral, and "track count" means next to nothing.

I use Sonar, EWQL SO and GPO. Sonar place no limit on me, so my track count tend to become large if I compare to what people say in this thread. My standard template starts off with 8 tracks for strings, 6 for winds and 6 for brass. Never less than 30 by the time I am done, and most often would go beyond 50. Even up to 100 tracks are OK. I see no problem with that and with track folders it remains very easy to navigate.

Whenever I record guitars I end up having up to 6 tracks for every guitar track. I always record both miced and direct input and never do drop-ins by replacing audio. I always record my drop-ins on seperate sets of tracks and use the slip editing. Every song I do usually would have 3 or 4 guitar tracks (acoustic rhythm, acoustic lead, electric, etc)

Sonar also alow as many busses as I desire, so I will most often end up with about 10 busses and one master bus.

Every synth I use will eat up at least 2 tracks (one for midi and one for audio / synth).

Last month I did a song that required choirs. I recorded SSATBB (6 composition lines), each voice seperate on a line and each line 2 to 3 solo voices. When I started to add effects I ended up with more than 20 tracks just for the vocals.

Drums are often another dog's breakfast when I mix down. I split the midi notes down to tracks, giving usually about 8 drum tracks of midi data. I use DR-008 with 4 tracks outputs.

I usually end up passing 40 by the end of a song, heh. Plus a couple sends for reverb or something.

I'm mainly using Orion Platinum on a P4 3GHz machine, 2GB RAM, and I run with about 8-12 tracks, max. But I've become a bit of a minimalist, so I don't over-orchestrate things any more.

Then, maybe 4-5 effects, 8 if I'm doing something trippy, spacey, or atmospheric.
