Is there a standard to follow when mapping samples for say, a drum sampler?

Not really. You could use the general midi mapping if it suits - see

I would personally orchestrate drum kits that place samples that you are actually likely to use in the same song together. No use for a group of timpani hits in a kit containing techno zaps and dance kicks - unless you're really avant-garde like that.
