Of course, it becomes argued whether or not the showing off "is" being virtuostic or not. In most cases of youth rock/metal/emo bands it's all "crowdpleaser" shit, though sometimes they do pull off stunts that do involve a lot of skill to sound good to the ears.

For me, if I know the person, to me it's flamboyant virtuosity.

If while listening your attention is constantly being focused on how the music's being played, not what is being played, then there's a very good chance it's wankery.

Keyboard wankers of the first degree, for example, never give it a rest. Everything's played very fast with lots and lots of hands flying up-and-down the keyboard. Hmm, that even sounds like wanking.

IMHO, effective keyboard playing is more than just playing scales very fast.

Any sequencer can play very fast and accurate, that doesn't make them the perfect musician. If you watch a classical pianist practicing, or more especially, an up and coming classical pianist being tutored, the real art of performance comes in nuance and phrasing, not with playing scales like a methamphetamine maniac.

Best examples: Hiromi Uehara (face cringer extreme), and Keith Jarret (looks like he has sex with the piano) though in my opinion they do quite a bit of both, though more interesting chord controls with lead lines not necessarily scales.

I wholeheartedly agree with your statement however. It becomes a lot harder to listen to someone playing difficult lines that doesn't even have any real relevance to the actual song in mind. (Showoff keyboardists like my cousin, for one.)
