My favourite: RJDJ on the iPhone. Not music-making software in the manner this thread intended, but hypnotic and modern music software nonetheless...
[just bung it on when you're out and about - basically a portable PD (pureData) live algorithmic audio masheriser, turning your surroundings into soundscapes/drones/beats/algorithmic-input etc... via the mic in the headphone wire. Ingenious]

Instruments :
Symphobia, Milestones
Almost no synths this year.
Don't think 2008 will stand the comparison with 2007 for synths. Very few instruments did bring something unique imho, though some robust synths were released.
Fx : No killers this year, but Kore 2 is quite impressive.
Host : No Major update for my main host
2008/2009 most expected : Alchemy, Melodyne.

This was an expensive year for me...But a lot of great stuff got released.
Synth : Omnisphere with Olga and Helix miles behind it...I'm still on the fence about Symphobia. Maybe next year.
Great stuff that got updated this year (some of it got bought after the updates) : Cubase, Zebra, Altiverb, T(s)aiko and Pro-C
Freebie of the year: Koreplayer.. it's like that first taste of smack.... I held on for 3 weeks before buying Kore 2 + Komplete 5 + several Kore packs
Effects: Volcano 2, UAD Moog filter, Pod Farm, Oligarc filter and effects...All great stuff.
Sample libraries'n'stuff: Scriptorium, Bowed piano, Action Drums: Taiko Edition.
Hardware: UAD2 Quad and two of the Korg Nanos.
The one I spend the most time with ATM is Omnisphere, so that gets my pick of the year.

When I look in my software folder I see the same goto stuff I've had for a couple of years now. There were a couple of little things and I finally cross-graded to Sonar. No big deal, no real excitement.
I don't expect next year to be much different as far as software is concerned. TBH I don't need any new hardware either but I may buy another guitar or two from GuitarFetish if the LP style XV500 turns out as expected. Only 3 days left until it gets here... ... I love new guitars.

I haven't bought much software as i'm a bit more disciplined than i used to be! And i have less money! 
I bought an R3 this year and it's probably the best purchase i've made, capable of all sorts of sounds from analog to digital grunge. With the arp and motion seq you can get some nice sequences out of it and it does wavetable scanning as well. If by the end of the year i grab the d16 plugs that will be definitely be one of the best software purchases i've made in '08!

Just got Lil Poly Ana! Doesn't really count as a new product, since it is a cut down preset player version of its big sister Poly Ana, but what a sound!

Consequence rocks. I'm just starting to get the hang of it. It is a beautiful piece of code. If you ever feel like you have not been able to sequence your VST/AU they way you want to. Consequence.
