Do you need to start all parts of song on the same note?

Chords, scales, harmony, melody, etc.

Hi, i'm reading some tutorials how to recreate some well known hip-hop songs on audiotuts and i've noticed that they always starts all parts of song (eg. synth, strings, brass etc.) on the same note. Is this the rule in a music theory or just
coincidence?

Neither. Aside from the fact that there really don't have to be any "rules" it maybe be indicative of the style but many songs will obviously start with notes in the same key but not all the same exact note by any means. You can start with dissonance if that's your thang, or complete and utter chaos, or the fullest and most traditionally harmonious mix of notes that you could possibly put together, or anywhere between. The choice is yours.

However, in this case it is likely that the unison (I'm assuming different octaves, though, obviously) of different instruments playing the same note is to help whatever line/melody they are playing stand out with a bit more power.

^agrees with above.

Often times the melody line from a chorus (usually the song title) is the foundation for the background melody. Not uncommon in rock.
