If you see that the chef may be NEW and possibly not even Japanese (despite it being called a Japanese restaurant here in the US) then I recommend pulling back a few feet incase the little juggling of the knives thing they try to do doesn't quite work.
I had an experience this past evening where I saw some metal pieces falling and thought... hmmmmmmm, it's not a given that they don't skewer you or themselves in the process of "learning on the job".
Food was great though. Also the occasional finger makes it more crunchy so...
"If we took the bones out it wouldn't be crunchy would it?" (name the source of that quote if you can).
