i must second beatmaker by intua...
it's a hefty $20 but with a bit of creativity and patience one can compose some cool tracks with it (especially when you download the free pc/mac app that lets you load your own samples into it)
also the moocowmusic apps are awesome... i used the "Guitarist" and "organist" apps on a couple tracks on my latest album. in fact, i think guitarist is my favorite iphone app, it lets you play guitar 4 different ways, as well as scoring out tabs and strumming/plucking them.
noise.io pro is also cool, a bit of a different approach to synthesis.
speaking of all this, i must go dig up my ipod touch and update my apps!
