I noticed the xy grid/pad at the bottom of the Cantabile screen but couldn't get any sound changes with it, can I attach the xy grid/pad to particular paramenters in my vsts? What are some best uses for the xy grid/pad in Cantabile?

The XY pad is similar to the modulation/pitch bend wheel on many MIDI keyboards. By default it sends MIDI modulation controller and pitch bend events so any plugin that responds to these events should respond to the XY pad.
Otherwise, you can assign your own controllers to each x-y axis (as you found in options -> Keyboard). Again, you can either select a controller that a plugin already responds to, or some other controller and use MIDI Controller Assignments to assign it to a particular plugin parameter.
Having said all that, while the x-y pad is great for testing plugins, in reality it's almost certainly too cumbersome for actual performance.
