ok i just added isequence to my list. this is a fun one, its like one of the 90's grooveboxes.like the yamahas and the roland mc303 and shit.

My list is more slightly serious music tools, the generative and interactive stuff is usually covered in threads like this..Bloom etc..
Noise.io Pro (pretty much as good as any VSTi you'll hear)
BeatMaker... (mpc like...extremely flexible..its expensive but its pretty serious business)
Thereminator (ah...theremin..yep)
PanDrumLite (was a freebie last i looked)
Thump (newish, quick and easy electronic music maker)
8Bitone (authentic 8 bit chip music maker)
Sound Warp (granular thing...tonnes of fun)
Record (inexpensive 4 track recorder..jam ideas into the phone over your imported backing tracks..or just record new ones)...beware FourTrack..its not as good.
Automap (fun with your DAW)
iShred....best electric guitar emulator..the pedal effects are awesome

I second star6 and bebot. They're both awesome and useful. I recently saw an article in the local paper about Jordan Rudess using bebot in his live shows.
