Is this easy to achieve?

It would be triggering different samples at the higher velocity.
With the guitar it could be triggering a hammer on sequence.

I think it's more like a bend (not a slide from one fret to the next, but actual bending of the string to raise pitch).

In plugsound free (I assume you're referring to the Spanish guitar patch), the note "bending" is really a hammer-on, not a string bend. And it's accomplished by programming a sample layer at high velocity that actually includes the hammer-on as part of the sample.

Bending could be done with yer pitch wheel ofcourse
