Not quite countries but they deserve mention. From near the equator and near both poles:
Hawai'i --
Once a country in its own right, now a state of the US. The late Israel Kamakawiwo'ole (Bruddah Iz) plays ukulele.
Antarctica --
Scientists, engineers, and such perform in Antarctica as part of "Live Earth."
Sami culture --
The "jojk" singing form is old; I suspect it might go back farther than history does.
