I'm in a band, I mix the band while playing acoustic drums & I was thinking of having an ipad on top of my powered mixer to my left and using it as a synth and or sampler,
I would like to know what apps you guys are using and how much you like them

The best two sites I've found for info about iPad music apps are:
http://www.promusicapps.com/category/ipad/
http://the-palm-sound.blogspot.com/sear ... /%20iPhone
In general, I think the capabilities of the current crop of software are much more limited than you seem to think. I'm not sure there is anything I would want to use for live performance. There are some synths but they mostly have little keyboard interfaces that would make it very easy to play the wrong note in a live setting, as well as obviously having a limited range.
The most interesting apps I've found are :
Korg Electribe & Rebirth (basically drum/rhythm machines so probably not much use to you if you play acoustic drums)
Aurora Studio HD - software equivalent of a Tenori-on. You could maybe use this for live playing to some extent.
iSequence - sequencer
There are also various thing that allow you to use the iPad as a midi controller to control your computer or other hardware. If you don't mind having a computer along with you, iJammer is a damn cool app you can use to play midi notes on your PC from the iPad. It also has an interface that makes it possible to play a large range of notes on the iPad screen space rather than trying to mimic the traditional keyboard interface.

iSequence is the bomb, really. Not good for realistic piano sounds, but for electronica it rocks your socks off. Has sample import now since the latest update. i'd rate it a 8.5/10.
Finally!

IMO the apps just aren't quite ready for real world use yet. It has to be bullet proof for me to use it live or with the band.
The sequencing and sound generating apps are great for creative inspiration though.

A flurry of amazing ipad control apps are coming out for Ableton Live, offering control over clips, mixer, devices, note editing, pads, all kinds of stuff and they all look great. Here's a few:
LiveControl: http://livecontrol.q3f.org/livecontrol/
TouchAble: http://www.touch-able.com/Site/touchable.html
Covert Ops Pad controller: http://basilikacoop.textdriven.com/inne ... ontroller/
There's also the griid, but it doesn't have half the features of the above three.
