I know it's not exactly iOS etc, but surely there has to be some kind of synth action on it? I've had a look around but wasn't able to find ANYTHING.

Mostly you have to look for them in Symbian specific sites/forums.
And make sure you actually search for Symbian (not Synbian).

the only music application I'm aware of on symbian is Syntrax: http://www.finished.nl/
I only fiddled a little with it on a UIQ phone, don't know if (and how well) it works on your target device. but it's free.
