I don't own either of these (though I've just bought an iPad!), and on the iPad you can connect a USB Mic in using the camera connection kit. Obviously this isn't an option for either the iPhone or iPod.
But is there a kludge that could let you do it? I'm thinking of a small battery powered USB audio interface (it would have to have USB in to connect the mic), which outputs audio through a stereo minijack. Then plug the minijack into the iPod/Iphone input/headphone socket and it ought to work.
Does such an interface exist, and would this work?

I was interested in this mic called Mikey that is supposedly a decent mic (and has it's own field recording app) that works with the iPhone. It plugs in at the bottom and you don't have to handle 2 separate pieces of gear.

Edit - just to clarify I do realize you probably already have the USB mic but to use another one, this is an option for the other devices since I don't think we'll get to see the USB kit work on the other devices ever
I know it isn't USB but I use iRig with an economical Radio Shack XLR-->1/4" adapter to get a good signal into iPod Touch, iPhone, and iPad all with good results (typically using SM58)
