Can this be modulated/changed -- number of harmonics over time, phase over time, amplitude over time?
Bet this is in your new synth.

No, there is no such thing in Rhino 2. Nor in my new project, for that matter 
What you can do, though, is define 2 different additive settings, assign them to 2 oscillators, and crossfade them using the envelopes / keyboard tracking / velocity curves.
