On a piano, From G to F# ... what interval is this? major 7th, minor 7th? dominant 7th?

The f# would be the major 7th to the G maj triad that you could, indeed, form from the B minor scale.

Unless I'm missing something, which, I'm sure, SOMEbody will be quick to point out.
