Updating IOS

Hi there, is there a way to update iOS on iPhone and iPad without losing your apps?

I tried that, I haven't put them back on yet tho. iTunes seems to have forgotten the folders I made, and now possibly all my saved documents. I don't want this to happen to my iPad.
I backed all my info up first, selected update, iTunes backed up my phone again then informed me that texts, settings, everything but apps basically would then be backed up and restored. My previous backup seems to have been deleted.

You can backup the apps that way too. For some reason it didn't backup some of my documents, either. There's a program called iExplorer I was looking into for next time, but I haven't tried it.
