What is the harmonic and melodic difference between Schlager/Apres Ski and sad Music?

I dont ask how it sounds, I ask which is the difference within the accord structure and tensions. Because sometimes my Music sounds like Apres Ski but I dont know why...

Do you use pre-made loops? Because if you stick a bunch of "house" loops from some sample CD together it's very likely going to sound like Apres Ski.
For those outside the U.S. of Eu, "Apres Ski" is one of the many modern variations on what is essentially polka music.

Rythm & arrangement style? "Easy" one note melodies with a fast tempo + upbeat lyrics?
Listening to some random dutch/german "after ski"-music I think most of it could be very sad if it had other lyrics, a much slower tempo and rythm/drums with much more (unstable) groove and less umpa-umpa march-band feeling.
Thinking an arpeggiated FM EP Piano, some jazz brush drums and a saaaad wailing harmonica
