And I don't mean recent history (1900+), I mean anything from early folk/celtic, medieval or even the early classical period.

I have already seen "how music works" and even thou it was informative in many ways, I feel it left out a lot of stuff and was a bit "dumbed down".

Digging up an old thread here... I'm not sure if you're still around...

I'm in the middle of listening to the audiobook "The Great Courses - How to Listen to and Understand Great Music", if you test audible you can get this for free and keep it as well.

It's 36 hours of history and explanation. It's not a music appreciation course, it does in fact talk about the compositional particularities.

However: it focuses mainly on western classical music, so I'm afraid with the folk/celtic angle you're not getting that much info.

However, it is a great overview of the history with some outstanding gems of compositions that I would have never stumbled across.
