I've been offered an iPhone 3 for next to nothing, would it be of any use musically speaking? Or will it have been left too far behind?

I'm thinking simple performance synths, beat makers etc nothing more than that.

I think your limiting factor would be the OS.
Looks like the iPhone 3G (original iOS=2.0)can use iOS 4.2.1
The iPhone 3Gs (original iOS=3.0)can use iOS 6.1.3

So, if it is the 3Gs then you have a better chance at having more apps that will run now that you can download previous versions of many apps.

I think on the iphone 3 the processor is also too slow.

For example even setting polyphony down to 8 there's crackling on music studio on iphone 3. It's ok on iPhone 3GS though.

Use it for a simple Oscillo, if SoundBeam works on it.. I guess the following may work fine since I have them on iTouch 2nd gen: iDrum, Noise.io. Pro, BeatMaker, TechnoBox, Jasut/Pro, NLogFree, Argon, ProLoop, JR Hexatone, SynthPond, Filtatron, nanoloop, iRealB, SunVox...
