I've read about people using Audio Hijack Pro to use VST's in iTunes:

In my experience, the "use case" for this is mainly to compensate shitty equipment (monitors, headphones)

So buy better monitors and you don't need any EQ or whatever after that.

Or switch to a media player that does support a plugin chain (WinAmp for example)

You could use Asio link as Windows output, then open any vst host and all audio will pass through.
