Sorry to resurrect an old thread, but....
Try out MidiPatterns, it is a step sequencer with trigger probability for each and every step on each and every track, combined with user-defined ranges of randomness for note velocity, volume, note duration and amount of swing also mapped to each event on the sequencer. And for an astonishing price (in a good way).
You can't globally change the probabilistics on the fly, but you can create more busy versions of the same pattern and arrange them how you want.
For me it combines the probabilistic aspects with the ability to create patterns with odd time signatures, and to assemble songs with patterns that have different time signatures, perfect for jazz or progressive rock.
