Just wondering if there's anything out there with a performance interface more like Geosynth and Cantor, but maybe more up to date? In particular, I'd like a more traditional subtractive synth engine like Animoog or Z3ta etc.

In the past, I tried controlling Animoog with Geosynth (and Cantor I believe). While I did manage to get it sort-of working, it wasn't really ready for musical prime-time as glitches and hung notes were just too difficult to avoid.

I do like the multi-overlapping-rows interface better than the little Animoog (well, I guess Buchla, really) style pads, as you can fill the screen and have a wide range of larger "keys".

I've looked around a bit, but have not seen any development in this area for quite some time (not even any updates to those apps). Am I missing anything?

Orphion, SynthX, TC-11, SoundPrism, Konkreet Performer, Selina, come to my mind. Maybe even Gestrument. Some are controllers, some have its own sound engine.
