Most if not all of my tunes are clocking at the 75-128 range.

Exactly.

Although if you make the observation and then decide "I don't have enough tracks at 140 bpm, better make some now" it becomes a kind of restriction.

Well, here are people with a single answer and I think they set 'BPM at 92' or whatever before proceeding, or have this one project template always, and that works as determinant. I didn't find myself all that good at guessing BPM that weren't related in a simple way to 60 or 120, entrained to a clock... I have ideas and they are what they are. So I think to some extent a cart is pulling the horse of thought there.

120. Because I'm lazy and don't usually bother thinking about tempo when I start recording. So I just use whatever the default is, and that usually ends up being 120. Also because I started making music in the 80's, and 120 was the default on just about every sequencer, drum machine, and arpeggiator. So it feels natural to me. I mean, I do actually vary the tempo where appropriate, but I would guess that it stays at 120 at least 75% of the time.

I used to read the pre 'DJ Mag' called 'Jocks' in the 80's and the BPM on all the old 86 to 88 house stuff was weirdly 119.X BPM, rarely 120.

I use that tempo 119 as a minimum and go up to 132bpm max, I seem to like 128 at the minute.

I make a lot of downtempo things 68 to 108 for whatever reason

Just finished a new one @120 & I kinda like it . . .

I start with a guitar part(or midi guitar), then find a drum machine preset, push Reaper's tempo slider around until it fits. I don't like recording to a metronome.
