Mulab is a fine choice imo. The only reason I chimed in about S1 Free was this...
[mulab is]...free for up to four tracks
Four tracks is not very much to work with and I thought the unlimited midi and audio tracks of S1 Free might be of some benefit to the students if the idea is to make more than just really basic songs, if the idea is to give the students something free with more tracks to use for learning and not just push any particular product on them only because we happen to like it.

Which is why I also mentioned Acid Free, 10 tracks.

It would be an interesting experiment to have half the class use MuLab and half S1 (or another DAW) for one week, and compare 1) productivity, 2) quality, and 3) happiness.

FYI, since you are comparing, I left S1 for MuLab partly because S1 Free (and S1 Artist) do not allow VST plugins, while MuLab Free does (max eight). You need to buy S1 Producer ($200 at Sweetwater) to use VST plugins.
