i can only speak about ipad apps, so you will have to check for compatibility (or wait for your ipad)

these apps all stand out to me, and many are so unique (or improved upon e.g 'turnado') in the tablet world

keep an eye on these blogs :

http://discchord.com/
http://www.thesoundtestroom.com/

animoog
audioshare
aufx: 'space' & 'dub'
borderlands (though maybe wait for the long-promised update)
dedalus
drums xd
flux:fx
gestrument
glitchbreaks
guitarcapo+
impaktor
gadget (i also really love ipolysix)
garageband
nave
navichord
orphion
samplr
sector
sunrizer
soundscaper
tc-11
thor
thumbjam
tnr-i
tonestack (great effects)
turnado
xynthesizr

also, definitely check out the games - 'the room', and 'the room two' :)

YouTube is a resource you should use in making your decisions. Any app worth having probably has many demonstration videos by talented (and not so talented) musicians.

And I recommend AppShopper or something like it to notify you when your desired app goes on sale. I have too many music apps already but I always feel less guilty about buying "just one more" if I buy them on sale!

I don't have an iPhone or iPad, but if i had one, i'd buy Waldorf Nave for sure. :) Probably the Animoog and Z3TA too. And Cubasis. It's amazing what you get for the price of just one lower priced VST on iOS.

Stuff I like:

SunrizerXS

Forget about the whole supersaw emphasis; this is a capable, good sounding synth app, that's easy to program even on a small screen. (If it ever comes out on PC, I'd get it at ten or even twenty times the price, I like it that much.)

SampleTank

With a MIDI interface, this can add a nice ROMpler to a live setup. Even the free version has some sounds that can give you some good bread and butter sounds.

Rebirth

Interface on my iPhone is a nightmare, but for playing back tracks you created on your PC at home, it works well. Fits well on top of my CS2x to add a groovebox to jam to.

Figure

Looks like a toy, sounds like a track. Also a cheap jam-along app which has some nice drum sounds, courtesy of Reason's Kong drum instrument. Play with it when you're bored.

DM1

All kinds of vintage drum box sounds, and I've actually used its synchronization capabilities to sync my CS2x arpeggiator to a WIST signal from Figure.

There's a lot of other stuff I don't use that often, like Animoog, iMPC, Magellan and loads more, but YMMV, depending on your preferences and workflow. Audiobus, while now not as essential as it used to be, is still nice to have just in case, but it looks to me better suited to iPad app use. I have difficulty imagining using your iPhone in a way that requires that kind of routing, but that's just me. (One thing that isn't strictly speaking a music app, but that I use a lot, is a rhyming dictionary.)

Most of all, it depends on what you think you'll use your iPhone for; mine does double duty as a sound expander and groovebox, but again, that's just me.

Have fun experimenting with stuff.

I think I just saw an article over at the Audiobus forum about an "AU" version just come out.
"All generalizations are false".
"Don't quantize me bro"!

My fav sound/audio/music related iPhone apps:
- midiTTS (A surprisingly flexible MIDI controllable text-to-speech app. It's deeper and much more expressive than it may seem at first glance/review.)
- Arpist (wonderful arpeggiator. wonderful arpeggiator. wonderful arpeggiator. MIDI only)
- Lemur (THE BEST INTERFACE DESIGNER EVER. MIDI and OSC only)
- MidiMe (Instantly records and loops x/y gestures and sends them out as CCs????!!!!! Oh heaven! Love this little app. MIDI only)
- Seekbeats (EXCELLENT iPhone drum machine/seq. Fantastic for percussion-focussed sound design. Sequencer-based)
- Grantophone (A surprisingly deep and uniquely expressive synth and performance-based instrument. No MIDI yet though, but I don't care)
- SoundyThingie (A wonderful example of an unorthodox instrument that is extremely useful for the bizarre music I try to make)
- Synthecaster (pitch bend friendly MIDI controller and lovely synth in one)
- RoboticDrum (Nice probability-based drum seq/synth. Sequencer-based)
- nanoloop (Synth, Seq, deep, huge, surprising, and wicked, with a learning curve, but worth it. Sequencer-based)
- Sunvox (THE Tracker for iOS. Actually just freaking AMAZING if you take the time to learn it. Cross platform. sequencer-based, modular routing)
- Beatwave - (So NOT JUST a grid sequencer. So much more. So endlessly enjoyable. So sweet)
- AudioShare (The best recording utility I've found; use this constantly)
- Wravend (Bizarre and brilliant sound design oriented wave/osc drawing app)
- BitWiz (live coding oriented bytebeat synth/seq; I freakin love this thing. Must try)
- Cassini (perhaps the deepest synth for iPhone at the moment. Certainly can sound bloody great)
- triqtraq (BRILLIANT on-the-fly recordable automation based seq/synth)
- Virtual ANS (nice emulation of a very old synth)
- TweakyBeat (simple, addictive seq/synth)
- Otomata (deceptively generative fun)
- insTuner (useful, accurate tuner, with some nice features)
- TempoTool (yup)
- Soundrop (nutty rhythm generator)
- AUFX:Space (lovely reverb with a recording option)
- MIDI Editor (simple, effective, nice)
- MIDImophisis (there's others available that may be better, and certainly prettier, but I've grown to appreciate this ugly audio-to-MIDI thing)
- littlemidi (surprisingly often handy)
- Runxt Life (well done MIDI-based Game of Life emulation)
- Mixtikl (must have for generative fans)
- Noatikl (must have for generative fans)
- Sweet MIDI (the best; most performance-friendly MIDI file player I found.... last year. Still like it)

My fav motion-based visual design and image capture related iPhone apps; great for incorporating into multimedia projects:
- Time Piles
- Liquid Lens
- iMotion
- FCW Cam
- VOSC
- RealWorldAscii
- +loop

All my favorites have been mentioned (the top of which are Caustic 3, Samplr, Sector, Audiobus, Audioshare), so I'll just chip in my favorite (live) looper: Loopy HD. :)
