1) Does the LE stand for Limited Edition? Will I be able to use ST2 LE for a limited time before I have to pay for it, or is it just limited in functionality? Will I be able to save projects or export to wav?
2) If I get ST2 LE with the Symphony Strings plugin, (i think it's a plugin. not too familiar with synth terms yet) will I be able to get more plugins or instruments for ST2 LE later?

In your host sequencer, yes (if it has that functionality).

Yes. You can expand it with up to 30 titles from SR, IK and AMG and you can also upgrade to the full version of SampleTank 2 that has more sounds and more capabilities than the LE version. You can do all of this over time as well to build a great system.
