I have both Shimmer and Ubermod and Ubermod can do h u g e spaces extremely well! 
I once thought I had mono for an entire year. It turned out I was just really bored...

One thing I've gotten frustrated by sometimes is loving the particular sonic character of a reverb,
but finding out that it's not a proper stereo reverb- the old DoverAudio EM82-C Warm Reverb is an example of this.

Any reverb that has a Feedback parameter, where the feedback can go to 100% (or a feedback gain of 1.0), can get an infinite reverb. I was playing around with the UAD version of the RMX16, and it can get an infinite reverb in the Ambience mode, when the Decay time is set to 9.9 and you make the high and low tone controls flat. It is a weird, ringy infinite reverb, but my guess is that it was used in a lot of tracks from the 1980s.

You can get a good ambient reverb with quite a few plugs, but it`s how one incorporates delay,compression,stereo field/pan and so on to the whole sound that really makes it great.
Mono verb with other effects can give you the best verb if you put some effort into it. I`ve done this with great results in the past, but i`m usually too lazy and just slap on a fave verb.
I prefer multi-effect hardware verbs because of the effect combinations and good programmers.

The thing with shimmer is that it's basically a reverb and a pitch shifter combined. You can take a simple chord and run it into a 5th up + 1 octave up reverb (shimmer)... instant lushness. Add pre-delay so it trails around behind the notes in an organic way and it's a really cool effect. You can then have it constantly applying the reverb to the input signal, or (what they call in the effects pedal industry) "regenerating" shimmer, which creates a feedback loop on the output so an octave up feeds into itself - so the octave up shimmer morphs into 2 octaves up, then 3, and 4 and so on until the tail decays. That's what creates that angelic thing. If high in the mix it can start sounding really cheesey and gimmicky, but cutting the high-end brings the lush back.

And since my plugs are all about ambient reverb and combine these settings can't resist to throw in another alternative myself. So please fogive the self-promotion.

I made three short examples of different time mode combinations in REFLEX+. All three are what i'd call and use for ambient spaces, very much depending on what exactly is fed in.
Ambiverb uses two reflection algos with little modulation and different filter settings.
Ambilayverb is a combination of a lo cutted delay feeding the reverb. This results in some vague echoes in the decay.
Echoverb1 is made from the original Long Echoverb I preset featuring distinctive audible echoes feeding the reverb.

As mentioned by others already i'd also say a lot of plugs could do the job for that kind of sound. It very much depends on the musical environment it should fit in and on the personal taste.
Sometimes it's easier and faster to simply try some favourite presets in a combination of favourite plugs, sometimes chances are better to get a wanted result by tweaking a more complex plug that provides combinations of different settings.

I have not mentioned Übermod because I don't use it for reverbs but I know about some of the presets with this very good sounding big reverbs like the BigBloomReverb. Is this comparable more to Shimmer or to some of the other reverbs like ValhallaRoom or is this technically a completely different kind of reverberation?

Not to encourage spamminess, but stw's Reflex Pro, though sold as a delay, has some pretty insane possibilities for huge ambient reverbs; the interface is a bit on the tiny side, but there sure are a lot of choices for EQ, modulation, etc. within one plugin.
