So after 2 weeks I finally got a response from Cakewalk.
During those 2 weeks I logged out and into the Command Center regularly and it always stayed in demo mode.
Now after the Cakewalk support response "Did you try logging out and in again" I relogged again and now it is properly registered.
Well, it works now I guess

I think I'm probably going to call Cake. I have some credit on Skype, see how it goes...

After 10 days I got a reply. They excused for the delay and explained it was because of a lot of email coming in 
It was friendly, professional and helpful though. I couldn't login to CCC with my credentials. They gave me a solution that worked (reset the password). Logged into CCC, updated ZETA and it works.
So, not everything is bad bad bad with Cakewalk

The logging out and in into Command center was the only thing they suggested me.
After I send all the info they asked (status on the about screen basically) it went quiet again.
Guess I can wait another 2 weeks on the next response now.

Updated; Command Center won't activate the plugin even though it's showing as green. This is definitely a real problem.
Tried to log in and out of Command Center and also reinstall - neither works, plugin is stuck in 'demo' mode.
Terrible.

RE: People having problems with activating Zeta - I thought you could simply install the plug and insert the serial number with no need to use the command center - am I wrong?
I was considering upgrading both Zeta along with Dimension pro, but if I need to have this 'command center' application installed I think I will give it a miss.

You might be able to install the plug offline, but you will not be able to activate it without CCC (and then having to be online)

I was able to install it successfully without CCC on the second computer.
