I find it difficult to work with a small screen, my fat fingers and all that.

But I don't understand why one shouldn't be able to make pro tracks with something like Caustic: http://www.singlecellsoftware.com/caustic

It even got a master section with some options to tweak the final output with EQ and Limiter

This one sounds decent enough

There is a lot of music made of professional quality using mobile devices...
and there is also the possibility to mix and polish things outside of apps being used after composing.

And about fiddly small interfaces and screens one thing that I use is a pen which makes things easier, specially if the app was made for 7/10 inch screen and I am on a smaller screen.
A stand with suction cup made for cars are also a pretty great small investment if at home.

As seems to be the case with electronic music production; it's the workman, not the tools that makes a great track. Something like FL Mobile could be useful for laying down quick melodies on the bus or anywhere away from your computer.

As FL Studio Mobile is being mentioned throughout I would just say that there is better options and personally would recommend Caustic or SunVox for more complete music making and both of them have countless of users that do professional grade music on them, plus active and helpful communities.
Both are available on iOS and Android so learning them is just for this reason convenient as there always will be a device that can be used if one gets lost for example or change to one O.S or another...
They also have high flexibility when it comes to sound design and synthesizers which FL Studio do not have.
Both also works great on older devices. Which again is very cool as people have old devices everywhere that they give away for free!

Caustic is coming with a fantastic upgrade soon and SunVox is developing in new and fascinating ways all the time.

There is of course countless of other options but both of this as mentioned are very flexible and full featured.
And yes I forgot... Caustic have a free PC version and SunVox have a free version for PC/Mac/Linux and even other Operating Systems.

An iPad Air 2 or Pro is more powerful than a lot of computers less than a decade ago, and it's more powerful than just about anything people made music with for the majority of the past century. There are several professional grade audio programs available that are optimized for the hardware, like Auria Pro. You even get Fabfilters for it.

Why wouldn't you be able to work professionally with it? Though the question is also: Why would you want to? I do like it for mobile recording and playing around with the many creative music apps (like Caustic, Sector, Loopy), and I love Audiobus and Audioshare, but for editing and stuff you bump into some workflow and ergonomic downsides. That doesn't make it impossible at all, but you can probably get work done faster on a decent laptop or a desktop.

Good to know, thanks for mentioning it. I have Caustic on a Galaxy Note but the iPad has just Garage Band. Maybe I ought to get a second Caustic license.
