I am looking for a VST platform/DAW, where I can load a few VSTs (minimum 3) and assign MIDI channels to them, to be sequenced with Arturia's BeatStep PRO.

Free if possible, does't have to be sophisticated, just stable and if I can record the output, great.

Check that thread out. Not sure if the deal is still up or not but worth looking into. it pretty regularly goes on sale for $10

Thank you Mystic, just what I have been looking for. Gonna check it out.
It's $20 at the moment, but that's a good deal for a quality software from a big name company.

I use Bidule for this, it can run standalone, you add your beatstep midi in as a device, a midi channel splitter and then whatever plugins you want and connect them, you can then also route to a recorder which can record up to 32 tracks simultaneously for taking into a DAW later. I was looking for this type of thing for a long time and tried various solutions, and Bidule is my favorite. I have an Elektron setup and route the midi and audio through Bidule and build a custom rompler with VSTi's etc... I only scratch the surface of what Bidule can do.

The only downside if you want to sequence internally is that the internal sequencers/piano roll type stuff are capable but not much fun to use, but if you are sequencing externally with hardware it's great. This is my default setup to give you an idea:
