Live: Mapping incremental movements on controllers.

I'm almost positive this will have been asked previously, however as you're about to find out I'm not sure how best to articulate it, hence my difficulty to google.
I know how to map knobs in Live and theoretically buttons too, however with the latter each button press causes the value to shift to either extreme, full on or full off.
Instead is it possible for each button press to simply cause the value to +/- 1?

It might be possible to set up the button on your MIDI controller to send incremental values ...

I'm just ensuring I have all possible options to hand when I'm in the studio tonight - time is limited in there unfortunately.
