In iOS 10 Apple have removed one of the most useful features of the Music Player which is ratings and replaced it with a dumbed down version based on the stupid idea that musical preferences can be reduced to likes or dislikes. So I need a decent player app that still supports ratings and crucially also supports Apple Music/iTunes Match as I have a subscription. Tried Cesium which is otherwise great but it's iPhone only, not iPad.

One word: Best!
This is most respected music player, I switched to it 4 months ago.

You can transfer your music files/folders from Dropbox, Google drive & computer.
It has built-in customize EQ.
Auto Gain.
ID3 support.
Lyrics support
Shows comments and can sort the songs based on title, date, comments etc. so if you do DJing it will be so good.

Freeware version is okay, but nagging and ads.

Can't you just run Cesium in 2x mode?

That's interesting. I'm new to the ios world (ex-android user...) and the one thing I hate is syncing music to itunes. I tend to have lots of random mp3s around (soundcloud/bandcamp DLs, mixes of my stuff, other odd tracks I've found online...); before I could just open the phone as a drive and drag them in whereas now I have to add them to a custom playlist etc, never seems to work first time etc etc... :)

Would the above app (or any others..?) be more friendly to my way of working?
