Cubase and Ableton Live. Both allow you to change color, saturation and brightness without having to install dozens of themes to get the 'right one'.

Cubase 8.5

Logic X looks pretty good, too, but Cubase feels like home.

Studio One V3 is genuinely my favourite GUI of all DAWS (switched from Cubase 8- hated all the windows!)
X32 and 24C mixers, S88MK3, Live + PUSH 3, Osmose, RedShift 6, Pro3, S4, Tempera, Syntakt, Digitone, OP1-F, OPXY, TR-1000, Eurorack, TD27 Drums, Guitars, Basses, Amps and of course lots of pedals!

Renoise. It is not trying to emulate or even assume familiarity with a "real world" studio but is actually designed to make computer music on a computer. The tracker/hexadecimal learning curve is overestimated in my opinion. The benefits of taking the time to figure it out, I think, are worth the reward for getting to use a very efficient and powerful interface that won't fight you. If you make sample/vst-based music I would check it out as a worthy alternative to Live and FL. Seriously.

It was only a matter of time...

But SAWStudio, IMO, has the best UX of any DAW that I've used.

The default GUI is absolute bottom-of-the-barrel rubbish, but thought that went in to making a seamless user experience is evident. Of course there's a number of pretty good skins out there for it too (and some that are even worse than the default  )

It's really a shame that it's stagnated in recent years.
