Pop/Rock: Nicky Hopkins "work" with The Rolling Stones and The Steve Miller Band, and he released at least one solo album.

Jazz: Keith Jarrett - the Köln Concert ablum. And Gil Evans on Kind of Blue and Sketches of Spain (with Miles Davis).

Classical Solo: many favorites here, but the one I play repeatedly is Ivan Moravec Plays Debussy, which includes Image, Books 1 and 2--one of my all time favorite collections.

Classical Concerto: (again, many favorites) Gershwin, Rhapsody in Blue; Mozart #23; Rachmaninov #1

Piano Ensemble: Steve Reich, Six Pianos

I could go on forever with this...

So many great replies, and so many I've never heard of. It's a shame it's not legal to share clips. Imagine if we were all in a big livingroom going "dude, you have to listen to this guy!" :)
