I'm looking for software like Metasynth to turn images into MIDI or audio.
What else is out there that can do this?

It's nowhere as comprehensive as Metasynth, but it is free and fun (and works for me particularly well at glitch / 'randomness'):

Theres quite few VSTs too, one was from a KVR Developer Challenge but Ill leave you to discover them as I cant be arsed :p

It seems that the applications I tried (AudioPaint, VirtualANS, Photosounder, Audacity) convert to audio. Are there any that convert to MIDI directly and based on parameters that I could set? Or I'll have to go through an audio to MIDI conversion software, those results are often not very usable.

I tried RGB music lab, kind of interesting results and goes in the direction that I need, unfortunately the RGB music lab license agreement seems a bit too restrictive to me, so I won't explore this too much.
