They weren't breaches, just vulnerabilities. Where you will see the biggest hit is in I/O and that could definitely affect DAWs. I don't intend to find out.

Right. I haven't installed it yet, either. Or latest Safari or latest iTunes.

MS had to recall theirs, but we tested it before they did. It really hurt disk I/O. Up to 50 percent at times with NVMe. Alas, we don't test audio apps.
I'm sure it will be less than that eventually, but it is something I'll let other people beat test.

I have the latest installed on macOS. I have seen no impact on DAW performance at all.
