Automation:Write mode changes to latch when played in protools

Hi,

I am new to protools. I have 2 questions :

1) When i select write automation , it changes to latch mode automatically when i click play button. Why is that so?

2) Can you disable or bypass all of the inserts or sends at once in protools?
