Does anyone know if it would be possible to unhook the power source
from a Roland GK3 pickup,
and still get a signal?

Each signal from the hex pickup goes through an opamp inverting amplifier. The normal pickup, if connected, is buffered also, so no signal without power. The actual hex pickup seems to be six mini humbuckers. It would be possible to disconnect this and use your own amplification.

Hey thanks a lot.
I will think about getting one to disassemble and test.

You're right mate, it works.
It's about half the volume,
but the cable doesn't make any noise!

Good to see some hacking worked out for you. My next project might involve these pickups https://www.cycfi.com/
