I'm also very fond of Brian Eno, "Plateux of Mirror" is excellent, full of movement and very organic in sound. I personally much prefer the more structured albums like "Music for Films" or the collaborations with Cluster & co.
Some of Manuel Göttsching's (Ashra/Ash Ra Tempel) music is good for that ambient mood, although it is more correctly classified as Berlin School electronica, "Inventions for Electric Guitar" is excellent and very meditative, "New Age of Earth" is beautiful, more electronic.
Tangerine Dream's "Zeit" is an overlooked album, I think, but some of its sounds are a bit abrasive compared to modern ambient.
Back to the "true" ambient, Biosphere is my personal all time favourite. "Substrata" is very good, has the classic "arctic" sound he is known for, and very intense on conveying images. His newest "Shenzhou" is mostly based on sampled orchestral recordings of Debussy, restructured and reimagined - beautiful. Also, his collaboration with Deathprod on "Nordheim Transformed", based on sampled electronic pieces by contemporary composer Arne Nordheim, is immense and has an unusual texture of sounds.

An exceptional 'Eno' album, well worth hearing even if you know the original, is the Bang On A Can 1998 version of Music for Airports. BOAC are basically classicaly trained acoustic musicians who transcribed and performed an exact replica of Eno's original recording and performed it live, in front of him, at the atrium in London's Stanstead Airport. Brian said of this...
"I had already heard the record in airports five or six times. But this was very different. It was very moving and, after the concert, several people told me that it had them crying on the first few bars.
"I felt it myself, and I think it came in part from that absurd devotion, that hopeless undertaking to try and make an exact copy of something that is difficult to reproduce. the album "the dragon experience" is phenomenal too, but I'm not sure how "ambient" it is - more like instrumental middle-period skinny puppy - really choice stuff!
