I've been all through the manual, and looked for it in the trial, but can't find it. They have a projects section for exported MIDI/audio but I can't find an option to export it. What am I missing?

There is a Tracktion ( waveform ) forum here at KVR audio . You may have better luck there . I also use Waveform but have never exported midi , I'm almost 99% sure it exports midi ....

I do not own W10, but back in W9 (and previous DAW versions), it was MENU:Export -> Render to a file...; Change Format to be "MIDI file" (it defaults to WAV file); set options (e.g. Render Each Track to a Separate File); click the "Render" button.

P.S.: I recommend that the "Render Automatically" option be disabled, as it can sometimes cause the DAW to crash to the desktop.

Just tried it. Why on earth would it take 30 seconds to render a MIDI file? Then it didn't show up in either the browser pane, or the project listing, or Explorer. Perhaps that's because it's a trial, but it's a bit worrisome. Love the concept, but I'm becoming a bit leery. The performance on my 2012 Mac is pretty dismal.
