I have no idea how to change it as C, D, E, F, etc instead of I, II, III, IV. I checked the manual, but couldn't find it.
Another question is what is the shortcut for zoom in out? While I am using my laptop without a mouse, it is a pain in the ass. I also couldn't find it on the manual.
How to change the view of the chords? What is the shortcut for zoom in and out?

You can change the chord naming by right clicking on the master track:

If you always want to start with C,D, etc as the chord names, look for New Composition under Settings / Miscellaneous, and uncheck "Use Scale Degrees For Chords":

For horizontal zoom there is no keyboard shortcut (Ctrl-horizontal drag over the timeline), but there are several unassigned shortcuts for zooming tracks. Look under Settings / Keyboard Shortcuts:
