Which is better to install? x86 or x64

if your operating system is a 64 bit system, use the 64 bit version. If not, the use the x86 version, which is also known as a 32 bit version.
You don't say what you are using, so, that makes it harder to say which one to suggest.

On 32-bit Windows, install the 32-bit version.
On 64-bit Windows it is best to install the 64-bit version, but there is one thing to consider: if you have older 32-bit VST plug-ins, you won't be able to use them in the 64-bit RapidComposer and vice versa.
A VST bridge is planned soon to overcome this limitation. At the moment plug-ins are loaded into the application address space which has a few disadvantages, e.g. a badly behaving plug-in can crash the application.

Should I uninstall the demo version before installing the software?

Yes, you can uninstall the demo version, or just delete the program directory in "C:\Program Files" manually.
RapidComposer does not modify your system in any way, it does not install services, DLLs, and does not write into the registry.
