How do I turn multiple phrases into one? Also, is it possible to show all the notes on the keyboard?

Select multiple phrases, then look for "Glue Selected Phrases" in the phrase inspector. You can assign a keyboard shortcut for this.

Click on the small hamburger icon in in the track to change display options:
