OTOH for a beginner I would say you best bring some abilities to the table before you think writing tunes in the piano roll is a thing, and if you don't have the experience, a keyboard controller and/or some type of drum controller is indispensable as part of your learning curve. You aren't going to come up with 'workflow' out of 'tips and tracks' in a vacuum. If you're going to make real music, ideas first.
I just want to say, penciling in the notes is not invalidated by any other procedure in itself

I score to film and from film, so imagery I've seen and stored in memory is articulated in a progressive story way. The theme dictates what instruments are used but also how they are played. This is more critical when creating a piece of music for an existing film / animation that has been created than that of a piece of music that generates the progression within itself where you have more freedom of expression and pace in which to choose. In some cases, it takes more work to create film to music because you need to turn the sound into what you expect to see.

Firstly I make sure there's no cats around. Then I get a few cubes of cheese nearby, and only then will I start humming or whistling a few things which the mouse interprets in his/her own mousey way, and will then play into logic by scampering and jumping around my keyboard controller. And other times I listen to the mouse squeaks using a mic and headphones, while stimulating said mouse in various ways, poking, prodding, tickling, showing cat pics etc, and I attempt to play the resulting sounds into logic, or even record them as audio for further processing. This can yield some surprising and creative results.
