Probably Studio One. If you can live without VST plugins, Studio One 4 Prime has unlimited audio tracks for free. Includes 9 PreSonus FX plugins, Arranger Track, automation, Presence XT sample based virtual instrument, and a gig of loop and sample content.

The card I mentioned was actually a Zorro based one, so there would be problems however there are a few soundcards like this one you can get that provides these features for the A1200. https://amiga.resource.cx/exp/delfinaflipper.

In essence, it would be a lot better than a 8/12 Bit sampler device that we once could attach to the back of an A1200.

There are free builds (the last robust ones) of legacy main versions, Their limitations should not apply to your son's needs...
