Which DAW has the simplest record/playback setup for midi and audio? I'm looking for something that doesn't require a steep learning curve just to begin basic recording.

Simple isn’t really the name of the game anymore, unfortunately. That said, perhaps Soundbridge or Roland Zenbeats née Stagelight.

At least in Reason and Bitwig it's just hit rec and start to record.. Can't think anything easier.

FL studio has the most simple and fastest setup, because of the fact that FL sets a loop by default. All of the other daws, you have to set a loop point first, whereas FL studo has one set by default, and you are able to change the length and time sig. For example I use, Bitwig, and I would definitely have to take two steps to first turn on looping, then set the loop point, whereas FL studio this is not necessary, unless you want to change settings, all you have to do is play notes to create a pattern or hit record to record.

Truth is majority of DAW’s just do the same when you hit record and play something, it’s 2020, they all perform basics quite well and similar.

it doesn't distinguish between a MIDI or audio track...

Just remember to assign an input.. eg a MIDI device or audio device, this is true for all DAWs..
then hit record.
